  The Salt Lake City Bailliage invites you to an intimate Paulée-style tasting, celebrating the finest bottles from our members’ cellars. Attendance is strictly limited to 12 guests to preserve the convivial and collaborative nature of this special experience.

  We apologize for the short notice of this gathering. To ensure broader opportunities to participate, the Bailliage is planning additional events and anticipates hosting two Paulées per year going forward.

  What Is a Paulée?

  The Paulée tradition originates in Burgundy, where winemakers, growers, and friends gather at the end of harvest to share special bottles from their personal cellars. Unlike a formal paired dinner, a Paulée is defined by generosity, camaraderie, and the joy of discovering remarkable wines together. Guests bring wines they are excited to share, and conversation flows as freely as the bottles.

  Our Bailliage embraces this spirit—an evening where members open treasured selections, taste collaboratively, and enjoy the unpredictable magic that only a Paulée can create.

  A Celebration of the Cellar

  This event is a “bring the best of your cellar” evening.
  • Each couple is asked to bring one bottle of Champagne
  • …and one mystery bottle, presented blind for shared discovery and spirited discussion

  Confirmed highlight bottles include a 1961 Dom Pérignon and a 2014 Jean-Louis Chave Hermitage Blanc, ensuring a memorable night of extraordinary wines.

  A curated selection of heavy passed appetizers, crafted to complement the diversity and caliber of the wines shared:
  

  • Mini carnitas tacos with pickled onions
  • Seared dumplings with chili sauce
  • Shrimp and avocado cocktail on endive
  • Shaved jamon and tomato toast
  • Mini crab cakes with preserved lemon aioli
  • Whipped burrata and pea pesto crostini
  • Salted chocolate chip cookies
  • French macaron
